Sesame Mushroom Bourguignon

Cremini mushrooms (1 lb., sliced)

Carrot (1, peeled and minced)

Scallions (3 tablespoons, chopped)

Garlic (3 cloves, diced)

Vegetable broth (2 ¼ cups, organic)

Yeast (1 ½ tablespoons)

Sea salt

Sesame seeds (1 tablespoon, toasted)

Black pepper

Olive oil (1 tablespoon)

Sesame oil (2 teaspoons)

Portobello mushrooms (1 lb., sliced)

Pearl onions (1 cup)

Onion (1, sliced)

Thyme (2 teaspoons, chopped)

Red wine (1 ½ cups, full bodied)

Tomato paste (2 tablespoons, organic)

Whole wheat flour (1 ½ tablespoons)

Quinoa (2 cups, cooked)
